Culinary Arts & Sustainable Food Systems

Menus That Matter! Offerings in culinary arts, food safety, and urban agriculture began in fall 2015. This new program of study was developed with advisory groups of chefs, farmers, food processors/distributors and food industry entrepreneurs incorporating the latest professional culinary standards.

Graduates of the program will work as chefs or food entrepreneurs in a variety of settings using their "farm to table" competencies to positively impact health.

Sustainable Brewing

The Kalamazoo Valley Sustainable Brewing program teaches all aspects of brewing science. Classroom work is reinforced through hands-on experience with brewery technology used in the operation of a small-scale brewery.

Students participate in a practicum class environment: designing a beer recipe; monitoring and analyzing the brew throughout the entire brewing process; and assessing the final brew using tests and sensory evaluation.
